- 1 head green cabbage
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cut the cabbage head into four equal wedges, keeping the core intact to hold the wedges together.
- Brush both sides of each cabbage wedge generously with olive oil.
- Sprinkle salt and pepper evenly over all surfaces of the cabbage.
- Heat a large cast-iron skillet or grill pan over medium-high heat until hot.
- Place the cabbage wedges cut-side down onto the hot pan.
- Cook for 5 to 7 minutes without moving until the cut surfaces are deeply charred.
- Flip the wedges and cook for another 5 to 7 minutes until the outer leaves are tender.
- Remove from heat and serve immediately.
Notes
- You can squeeze fresh lemon juice over the finished cabbage for brightness.
- A sprinkle of red pepper flakes adds mild heat.
