Ingredients

- 1 head romaine lettuce, chopped
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/4 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomatoes, sliced red onion, and Kalamata olives.
- In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Season with salt and pepper.
- Pour the dressing over the salad ingredients and toss gently to combine.
- Sprinkle the crumbled feta cheese over the top.
- Serve immediately.

- For a heartier salad, add grilled chicken or chickpeas.
- You can substitute red wine vinegar for lemon juice.
