- 2 medium zucchini
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, drained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
- Cut the zucchini in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch thick shell. Chop the removed zucchini flesh and set aside.
- Heat the olive oil in a skillet over medium heat. Add the ground meat and cook until browned. Drain off any excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion softens, about 5 minutes.
- Stir in the reserved chopped zucchini flesh, diced tomatoes, oregano, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Spoon the meat mixture evenly into the hollowed-out zucchini shells.
- Place the stuffed zucchini boats in the prepared baking dish.
- Bake for 25 minutes.
- Sprinkle the mozzarella cheese over the top of each boat.
- Return to the oven and bake for an additional 5 to 10 minutes, or until the cheese is melted and lightly browned.
Notes
- You can substitute ground turkey for ground beef for a lighter option.
- For extra flavor, add 1/4 cup of grated Parmesan cheese with the mozzarella.
