Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish.
  2. In a small bowl, mix the breadcrumbs, parsley, lemon juice, and minced garlic. Stir in the olive oil until the mixture is just moistened.
  3. Place the salmon fillets in the prepared baking dish. Season both sides with salt and pepper.
  4. Carefully cut a pocket into the thickest part of each salmon fillet, being careful not to cut all the way through.
  5. Spoon the breadcrumb mixture evenly into the pockets of the salmon fillets.
  6. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
