- 1 large egg
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup strawberry puree (from fresh or frozen strawberries, drained well)
- 1/4 cup freeze-dried strawberries, crushed into powder
- 1/2 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking powder, salt, and crushed freeze-dried strawberries.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Mix in the strawberry puree until the dough is uniform. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly set.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Once cool, dust the cookies with powdered sugar.
Notes
- For the best strawberry flavor, use fresh strawberries for the puree and drain any excess liquid well before adding to the dough.
- If the dough is too soft to handle, chill it for 15 minutes before scooping.
