Description
A simple, visually striking black pasta dish featuring sautéed shrimp and garlic.
Ingredients

- 12 oz squid ink pasta
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup dry white wine
- 2 tablespoons fresh lemon juice
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook the squid ink pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and cook for about 1 minute until fragrant, being careful not to burn it.
- Add the shrimp to the skillet. Cook for 2-3 minutes per side until pink and opaque.
- Pour in the white wine and lemon juice. Let it simmer for 1 minute, scraping up any browned bits from the bottom of the pan.
- Add the drained pasta to the skillet along with the reserved pasta water. Toss to coat everything evenly.
- Stir in the chopped parsley. Season with salt and pepper to your taste.
- Serve immediately.
Notes
- You can substitute chicken or scallops for the shrimp if desired.
- For a richer flavor, add a pinch of red pepper flakes with the garlic.
