A straightforward recipe for classic split pea soup.

- 1 pound dried green split peas
- 8 cups chicken or vegetable broth
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 ham hock or 1 cup diced smoked ham (optional)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water.
- In a large pot, combine the rinsed split peas, broth, onion, carrots, celery, garlic, ham hock or ham, thyme, and bay leaf.
- Bring the mixture to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the peas are very soft and the soup has thickened. Stir occasionally to prevent sticking.
- If using a ham hock, remove it, shred the meat, discard the bone, and return the meat to the soup.
- Remove the bay leaf.
- Season with salt and pepper to your taste.
Notes
- For a smoother soup, use an immersion blender to partially blend the soup before serving.
- If the soup becomes too thick, add a little water or extra broth until you reach your desired consistency.
