Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas
  • 1/2 cup chopped celery
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1 box (14.1 ounces) refrigerated pie crusts (2 crusts)
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in flour and cook for 1 minute.
  5. Gradually whisk in milk and chicken broth until the mixture thickens.
  6. Stir in peas, celery, salt, pepper, and thyme. Cook for 2 minutes.
  7. Add the shrimp to the filling mixture and cook until they turn pink, about 3 minutes. Remove from heat.
  8. Place one pie crust in the bottom of a 9-inch pie plate. Pour the shrimp filling into the crust.
  9. Place the second pie crust over the filling. Crimp the edges to seal and cut a few slits in the top crust for steam to escape.
  10. Brush the top crust with the beaten egg wash.
  11. Bake for 30 to 35 minutes, or until the crust is golden brown.
  12. Let the pie cool for 10 minutes before slicing and serving.

Notes

  • You can use pre-cooked shrimp if you reduce the cooking time in the filling mixture.
  • For a richer flavor, substitute heavy cream for half of the milk.
