Rich, fudgy brownies topped with melted peanut butter cups.

- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 12 peanut butter cups, chopped
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- Melt the butter in a medium saucepan over low heat. Remove from heat.
- Whisk the granulated sugar and brown sugar into the melted butter until combined.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the chopped walnuts, if using.
- Spread half of the batter into the prepared baking pan. Sprinkle half of the chopped peanut butter cups over the batter.
- Spread the remaining batter over the peanut butter cups. Top with the remaining peanut butter cups.
- Bake for 25 to 30 minutes. A toothpick inserted near the edge should come out with moist crumbs attached.
- Let the brownies cool completely in the pan before lifting out by the parchment paper overhang and cutting into squares.
Notes
- For extra fudgy texture, slightly underbake the brownies.
- You can substitute milk chocolate chips for some of the peanut butter cups.
