Description
A simple recipe for a moist pumpkin coffee cake with a streusel topping.

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt

- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 1/2 cup water
- 1 cup all-purpose flour (for topping)
- 1/2 cup packed brown sugar (for topping)
- 1/4 cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
- 1/2 cup cold unsalted butter, cut into small pieces (for topping)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×9 inch baking pan.
- In a large bowl, whisk together 1 3/4 cups flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, mix the granulated sugar, brown sugar, oil, eggs, pumpkin puree, and water until combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Prepare the topping: In a medium bowl, combine 1 cup flour, 1/2 cup brown sugar, 1/4 cup granulated sugar, and 1 teaspoon cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Spread half of the batter into the prepared pan. Sprinkle half of the streusel topping evenly over the batter.
- Spoon the remaining batter over the topping layer. Sprinkle the remaining streusel topping over the top.
- Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan before slicing and serving.
Notes
- You can use canned pumpkin or homemade pumpkin puree.
- For a richer flavor, substitute some of the oil with melted butter in the cake batter.
