A simple recipe combining the flavors of pizza and enchiladas.
Ingredients

- 8 flour tortillas
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup cooked ground beef or pepperoni, chopped
- 1/4 cup chopped green bell pepper
- 1/4 cup sliced black olives
- 1/2 cup shredded cheddar cheese (for topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- In a small bowl, mix the mozzarella cheese, ground beef or pepperoni, bell pepper, and black olives.
- Spoon about 2 tablespoons of pizza sauce onto the center of each tortilla.
- Sprinkle a portion of the cheese and meat mixture over the sauce on each tortilla.
- Roll the tortillas tightly and place them seam-side down in the prepared baking dish.
- Pour the remaining pizza sauce evenly over the rolled tortillas.
- Sprinkle the cheddar cheese over the sauce.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly.
Notes
- You can substitute your favorite pizza toppings.
- For crispier edges, bake uncovered.
