A quick and easy recipe for a sweet and savory pork stir-fry with pineapple.


Ingredients

  • 1 lb pork loin, cut into bite-sized pieces
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tbsp vegetable oil
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup sliced onion
  • 1/2 cup sliced green bell pepper
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Toss the pork pieces with 1 tbsp soy sauce and cornstarch. Set aside for 10 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the pork and cook until browned on all sides, about 5 minutes. Remove pork and set aside.
  4. Add onion and bell pepper to the skillet. Stir-fry for 3 minutes until slightly tender.
  5. In a small bowl, whisk together 1/4 cup soy sauce, brown sugar, rice vinegar, ginger, and garlic.
  6. Return the pork to the skillet. Add the pineapple chunks and the sauce mixture.
  7. Cook, stirring constantly, until the sauce thickens and coats the pork and vegetables, about 2-3 minutes.
  8. Serve immediately.

Notes

  • You can substitute chicken or shrimp for the pork.
  • For extra flavor, add a dash of sesame oil at the end.
