A quick and easy recipe for a sweet and savory pork stir-fry with pineapple.

- 1 lb pork loin, cut into bite-sized pieces
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 tbsp vegetable oil
- 1 cup pineapple chunks (canned or fresh)
- 1/2 cup sliced onion
- 1/2 cup sliced green bell pepper
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
- 1 clove garlic, minced
Instructions
- Toss the pork pieces with 1 tbsp soy sauce and cornstarch. Set aside for 10 minutes.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the pork and cook until browned on all sides, about 5 minutes. Remove pork and set aside.
- Add onion and bell pepper to the skillet. Stir-fry for 3 minutes until slightly tender.
- In a small bowl, whisk together 1/4 cup soy sauce, brown sugar, rice vinegar, ginger, and garlic.
- Return the pork to the skillet. Add the pineapple chunks and the sauce mixture.
- Cook, stirring constantly, until the sauce thickens and coats the pork and vegetables, about 2-3 minutes.
- Serve immediately.
Notes
- You can substitute chicken or shrimp for the pork.
- For extra flavor, add a dash of sesame oil at the end.
