A simple skillet meal featuring chicken cooked with pepperoncini peppers and savory seasonings.

- 1.5 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 cup pepperoncini peppers, drained (reserve 1/4 cup brine)
- 1/2 cup chicken broth
- 4 ounces cream cheese, cubed
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Season chicken pieces with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned on all sides and mostly cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.
- Stir in Italian seasoning.
- Add pepperoncini peppers, chicken broth, and reserved pepperoncini brine to the skillet. Bring to a simmer.
- Return the chicken to the skillet.
- Reduce heat to low. Add cream cheese cubes and stir gently until the cheese melts and the sauce thickens slightly.
- Cook for another 2-3 minutes until the chicken is fully cooked and coated in the sauce.
- Serve immediately.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- For a thicker sauce, cook for a few extra minutes uncovered at the end.
- Serve this dish over rice or pasta if desired.
