Ingredients

  • 1/2 cup chopped cucumber
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook orzo pasta according to package directions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooled orzo, cucumber, cherry tomatoes, and red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano.
  4. Pour the dressing over the orzo mixture. Toss gently to coat.
  5. Stir in the crumbled feta cheese.
  6. Season with salt and pepper to your preference.
  7. Chill for at least 15 minutes before serving.
