Description

A refreshing Mexican shrimp cocktail made with cooked shrimp, tomato juice, lime juice, avocado, and spices.

Ingredients

Scale
  • 1 pound cooked, peeled, and deveined shrimp
  • 2 cups tomato juice
  • 1 cup clamato juice
  • 1/2 cup fresh lime juice
  • 1/2 cup finely chopped white onion
  • 1/2 cup chopped ripe tomato
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce (or to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large avocado, diced
  • Lime wedges, for serving
  • Tortilla chips or saltine crackers, for serving

Instructions

  1. Place the cooked shrimp in a large bowl.
  2. In a separate bowl, whisk together the tomato juice, clamato juice, lime juice, onion, tomato, cilantro, ketchup, Worcestershire sauce, hot sauce, salt, and pepper.
  3. Pour the liquid mixture over the shrimp. Stir gently to combine.
  4. Cover the bowl and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to meld.
  5. Just before serving, gently fold in the diced avocado.
  6. Serve cold in individual glasses or bowls, garnished with extra cilantro and lime wedges. Serve with tortilla chips or crackers.

Notes

  • You can use pre-cooked, chilled shrimp for quick preparation.
  • Adjust the amount of hot sauce based on your spice preference.
  • For a thicker texture, you can add a small amount of tomato sauce.
