Simple muffins filled with bright lemon curd.
Ingredients

- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup lemon curd
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate medium bowl, mix the milk, oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Fill each muffin cup about two-thirds full with batter.
- Place one teaspoon of lemon curd into the center of the batter in each cup.
- Bake for 18 to 20 minutes, or until a toothpick inserted into a muffin (avoiding the curd center) comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can use store-bought or homemade lemon curd.
- For a stronger lemon flavor, add one teaspoon of lemon zest to the dry ingredients.
