A simple recipe for making delicious shrimp fried rice at home that tastes like it came from your favorite restaurant.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked rice, cold
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 2 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and cook until pink and cooked through, about 2-3 minutes. Remove shrimp from skillet and set aside.
  3. Add onion and carrots to the skillet and stir-fry until tender-crisp, about 3-4 minutes.
  4. Add frozen peas and cook for 1 minute more.
  5. Push vegetables to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
  6. Add cooked rice to the skillet and break up any clumps.
  7. Stir in soy sauce and sesame oil.
  8. Return cooked shrimp to the skillet and toss everything together until well combined and heated through.
  9. Season with salt and pepper to taste.

Notes

  • Using cold, day-old rice is key for the best fried rice texture.
  • You can add other vegetables like corn or bell peppers if desired.
  • Adjust soy sauce to your preference.
