A simple recipe for making delicious shrimp fried rice at home that tastes like it came from your favorite restaurant.

- 1 tablespoon vegetable oil
- 1 pound shrimp, peeled and deveined
- 2 cups cooked rice, cold
- 1/2 cup chopped yellow onion
- 1/2 cup chopped carrots
- 1/2 cup frozen peas
- 2 large eggs, beaten
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add shrimp and cook until pink and cooked through, about 2-3 minutes. Remove shrimp from skillet and set aside.
- Add onion and carrots to the skillet and stir-fry until tender-crisp, about 3-4 minutes.
- Add frozen peas and cook for 1 minute more.
- Push vegetables to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
- Add cooked rice to the skillet and break up any clumps.
- Stir in soy sauce and sesame oil.
- Return cooked shrimp to the skillet and toss everything together until well combined and heated through.
- Season with salt and pepper to taste.
Notes
- Using cold, day-old rice is key for the best fried rice texture.
- You can add other vegetables like corn or bell peppers if desired.
- Adjust soy sauce to your preference.
