Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1/4 cup sesame seeds, toasted
  • 2 green onions, sliced

Instructions

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic.
  2. Add chicken pieces and toss to coat. Let marinate for at least 15 minutes.
  3. In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat.
  5. Add marinated chicken (reserving marinade) and cook until browned and cooked through, about 5-7 minutes.
  6. Pour the reserved marinade into the skillet. Bring to a simmer.
  7. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  8. Stir in toasted sesame seeds and sliced green onions.
  9. Serve immediately over rice.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the marinade.
