Description
A popular Indian dish featuring tender chicken in a rich, creamy tomato sauce.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 1 tbsp grated fresh ginger
- 3 cloves garlic, minced
- 1 tsp garam masala
- 1 tsp ground cumin
- 1 tsp paprika
- 0.5 tsp turmeric
- 0.5 tsp cayenne pepper (optional)
- Salt to taste
- 2 tbsp unsalted butter
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 (28 ounce) can crushed tomatoes
- 1 cup heavy cream
- 1 tsp sugar
- 0.5 tsp fenugreek leaves (kasuri methi), crushed
- Fresh cilantro, chopped, for garnish
Instructions
- In a bowl, combine yogurt, lemon juice, ginger, garlic, garam masala, cumin, paprika, turmeric, cayenne pepper, and salt. Add chicken pieces and toss to coat. Marinate for at least 30 minutes, or preferably overnight in the refrigerator.
- Melt butter in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes. Add minced garlic and grated ginger and cook for 1 minute more until fragrant.
- Add crushed tomatoes, sugar, and fenugreek leaves. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Add the marinated chicken and any remaining marinade to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until chicken is cooked through and tender.
- Stir in the heavy cream and cook for another 5 minutes until the sauce is heated through and slightly thickened. Do not boil.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier dish, increase the amount of cayenne pepper.
- If you don’t have fenugreek leaves, you can omit them, but they add a distinct flavor.
- Serve with basmati rice or naan bread.
