Description

A simple recipe for a classic Caesar salad topped with grilled shrimp.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup croutons
  • For the Dressing: 1/2 cup mayonnaise, 2 tablespoons lemon juice, 1 tablespoon Dijon mustard, 2 cloves garlic minced, 1/4 cup grated Parmesan cheese, 2 tablespoons olive oil, salt and pepper to taste

Instructions

  1. Toss shrimp with 2 tablespoons olive oil, salt, and pepper.
  2. Preheat grill to medium-high heat.
  3. Grill shrimp for 2-3 minutes per side until pink and cooked through. Set aside.
  4. Prepare the dressing: Whisk together mayonnaise, lemon juice, Dijon mustard, minced garlic, 1/4 cup Parmesan cheese, and 2 tablespoons olive oil. Season with salt and pepper.
  5. In a large bowl, combine chopped romaine lettuce and croutons.
  6. Pour dressing over lettuce mixture and toss to coat evenly.
  7. Divide salad onto plates. Top with grilled shrimp and remaining Parmesan cheese.

Notes

  • You can marinate the shrimp in a little lemon juice and garlic powder for 15 minutes before grilling for extra flavor.
  • For a lighter dressing, substitute half the mayonnaise with plain Greek yogurt.
