A simple recipe for a classic Caesar salad topped with grilled shrimp.

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 head romaine lettuce, chopped
- 1/2 cup grated Parmesan cheese
- 1 cup croutons
- For the Dressing: 1/2 cup mayonnaise, 2 tablespoons lemon juice, 1 tablespoon Dijon mustard, 2 cloves garlic minced, 1/4 cup grated Parmesan cheese, 2 tablespoons olive oil, salt and pepper to taste
Instructions
- Toss shrimp with 2 tablespoons olive oil, salt, and pepper.
- Preheat grill to medium-high heat.
- Grill shrimp for 2-3 minutes per side until pink and cooked through. Set aside.
- Prepare the dressing: Whisk together mayonnaise, lemon juice, Dijon mustard, minced garlic, 1/4 cup Parmesan cheese, and 2 tablespoons olive oil. Season with salt and pepper.
- In a large bowl, combine chopped romaine lettuce and croutons.
- Pour dressing over lettuce mixture and toss to coat evenly.
- Divide salad onto plates. Top with grilled shrimp and remaining Parmesan cheese.
Notes
- You can marinate the shrimp in a little lemon juice and garlic powder for 15 minutes before grilling for extra flavor.
- For a lighter dressing, substitute half the mayonnaise with plain Greek yogurt.
