Ingredients

  • 3 lb pork shoulder roast
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme

Instructions

  1. Pat the pork roast dry with paper towels.
  2. In a small bowl, mix the salt, pepper, garlic powder, paprika, and thyme.
  3. Rub the olive oil over the entire surface of the pork roast.
  4. Sprinkle the spice mixture evenly over the roast, pressing it gently to adhere.
  5. Preheat your grill to a medium-low heat, around 275 to 300 degrees Fahrenheit.
  6. Place the roast on the cooler side of the grill (indirect heat).
  7. Close the grill lid and cook for 3 to 4 hours, or until an internal temperature of 195 degrees Fahrenheit is reached.
  8. Remove the roast from the grill and let it rest, loosely covered with foil, for 15 minutes before slicing or shredding.

Notes

  • Use a meat thermometer to check for the correct internal temperature.
  • For extra moisture, you can place a pan of water on the grill grate opposite the roast.
