Description

A simple, refreshing pasta salad with a bright cilantro and lime dressing.


Ingredients

  • 12 oz pasta (rotini or penne)
  • 1 cup chopped fresh cilantro
  • 1/2 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 jalapeño, seeded and minced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, diced
  • 1 cup corn kernels (frozen or canned, drained)
  • 1/2 cup red onion, finely chopped

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water to cool completely.
  2. While pasta cooks, prepare the dressing. In a small bowl, whisk together olive oil, lime juice, cilantro, jalapeño, garlic, cumin, salt, and pepper.
  3. In a large bowl, combine the cooled pasta, diced red bell pepper, corn kernels, and red onion.
  4. Pour the dressing over the pasta and vegetables. Toss gently until everything is evenly coated.
  5. Chill the salad for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For a tangier flavor, add 1 tablespoon of white wine vinegar to the dressing.
  • You can add black beans for extra protein.
