Description
Make simple, moist muffins with a rich chocolate swirl.
Ingredients
Scale
- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 large egg
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 1/4 cup all-purpose flour
Instructions
- Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the 1 3/4 cups flour, 3/4 cup sugar, baking powder, and salt.
- In a separate bowl, mix the egg, milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Stir in the chocolate chips.
- Prepare the swirl topping: In a small bowl, combine the melted butter, 2 tablespoons sugar, and 1/4 cup flour. Mix until crumbly.
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Sprinkle the swirl topping evenly over the top of the batter in each cup.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger chocolate flavor, use dark chocolate chips instead of semi-sweet.
- You can substitute buttermilk for regular milk for a slightly tangier result.
