Description

A simple recipe for baked pasta topped with breaded chicken, marinara sauce, and melted cheese.


Ingredients

  • 1 pound pasta (penne or rotini)
  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 24 ounces marinara sauce
  • 8 ounces shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Cut chicken breasts in half horizontally to create four thin cutlets. Season lightly with salt and pepper.
  3. Set up a breading station: place flour in one shallow dish, beaten eggs in a second, and breadcrumbs mixed with 1/2 cup Parmesan, oregano, and garlic powder in a third.
  4. Dredge each chicken cutlet first in flour, shaking off excess. Dip in egg, letting excess drip off. Coat thoroughly in the breadcrumb mixture.
  5. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 3 to 4 minutes per side until golden brown. The chicken does not need to be fully cooked through.
  6. In a 9×13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Toss the cooked pasta with about 1 cup of marinara sauce. Spread the pasta evenly in the dish.
  7. Place the browned chicken cutlets over the pasta layer. Spoon remaining marinara sauce over the chicken.
  8. Top the chicken generously with the shredded mozzarella and remaining 1/2 cup of Parmesan cheese.
  9. Bake for 15 to 20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature of 165 degrees Fahrenheit).
  10. Let stand for 5 minutes before serving.

Notes

  • You can use store-bought marinara sauce to save time.
  • For crispier chicken, you can bake the breaded chicken separately for 10 minutes before assembling the casserole.
