Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups broccoli florets
  • 1 tablespoon olive oil
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 cup uncooked white rice
  • 2 cups water

Instructions

  1. Cook the rice according to package directions using 2 cups of water. Set aside.
  2. In a small bowl, whisk together soy sauce, honey, ginger, garlic, and sesame oil to make the sauce.
  3. Heat the olive oil in a large skillet or wok over medium-high heat.
  4. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  5. Add the broccoli florets to the same skillet. Cook for 3-4 minutes until bright green and slightly tender-crisp. Add a splash of water if the pan gets too dry.
  6. Return the cooked chicken to the skillet with the broccoli.
  7. Pour the prepared sauce over the chicken and broccoli. Stir constantly until the sauce thickens slightly and coats everything, about 1-2 minutes.
  8. Divide the cooked rice among four bowls. Top each bowl with the chicken and broccoli mixture.

Notes

  • For extra flavor, top the finished bowls with sesame seeds or chopped green onions.
  • You can substitute brown rice for white rice. Adjust cooking time as needed.
