  • 4 medium apples (like Granny Smith), peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Prepare a standard 12-cup muffin tin by lightly greasing it.
  2. In a bowl, mix the apple slices with 1/2 cup sugar, flour, cinnamon, nutmeg, and lemon juice. Set aside.
  3. In a separate bowl, beat the softened cream cheese until smooth. Mix in 1/4 cup sugar, egg yolk, and vanilla extract until combined.
  4. Cut the pie crusts into circles large enough to line the muffin cups. Gently press the dough into the muffin cups, forming a shell.
  5. Spoon a layer of the apple mixture into the bottom of each crust-lined cup.
  6. Top the apples with a spoonful of the cheesecake mixture.
  7. Place a second, smaller circle of pie dough over the filling for the top crust. Crimp the edges to seal and cut a small vent in the top of each pie.
  8. Brush the top crusts with the beaten egg wash.
  9. Bake for 25 to 30 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Let the pies cool in the tin for 10 minutes before carefully removing them to a wire rack to cool completely.

  • You can use pre-made pie dough circles if you prefer not to roll out the dough.
