- 3 lbs Russet potatoes, peeled and quartered
- 4 large eggs, hard-boiled and chopped
- 1 cup celery, chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup sweet pickle relish
- 1/2 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon Creole mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon hot sauce (Cajun style)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (or to taste)
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Place the quartered potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until potatoes are tender when pierced with a fork, about 15-20 minutes.
- Drain the potatoes immediately and let them cool slightly. Place the warm potatoes in a large bowl.
- While potatoes are still warm, gently fold in the chopped eggs, celery, red onion, and sweet pickle relish.
- In a separate small bowl, whisk together the mayonnaise, yellow mustard, Creole mustard, apple cider vinegar, hot sauce, smoked paprika, garlic powder, and cayenne pepper.
- Pour the dressing mixture over the potato mixture. Gently fold everything together until just combined; avoid overmixing to keep the potatoes intact.
- Season with salt and black pepper to your preference.
- Cover the bowl and chill in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
- Garnish with fresh chopped parsley before serving.
