- 1 medium butternut squash, peeled and cubed
- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 teaspoon dried sage
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Toss the cubed butternut squash with half the olive oil, salt, and pepper. Spread on a baking sheet.
- Roast the squash for 20 minutes until tender.
- While the squash roasts, heat the remaining olive oil in a large skillet over medium heat.
- Add the sausage to the skillet and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add the chopped onion to the skillet and cook until soft, about 5 minutes.
- Stir in the minced garlic and dried sage; cook for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add the roasted butternut squash to the skillet and stir gently to combine.
- Cook for 2-3 minutes until the liquid has slightly reduced. Season with more salt and pepper if needed.
Notes
- You can substitute sweet Italian sausage with mild or hot Italian sausage based on your preference.
- For a richer flavor, use vegetable broth instead of chicken broth.
