Description

A straightforward recipe for a classic blueberry cobbler with a biscuit topping.

Ingredients

Scale
  • 4 cups fresh or frozen blueberries
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup cold unsalted butter, cut into pieces
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, mix the blueberries, 1 cup sugar, 1/4 cup flour, lemon juice, and vanilla extract. Pour this mixture into the prepared baking dish.
  3. In a separate bowl, whisk together the 1 1/2 cups flour, baking powder, and 1/2 cup sugar.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the milk until just combined to form a soft dough. Do not overmix.
  6. Drop spoonfuls of the dough over the blueberry mixture, leaving small gaps between the mounds.
  7. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the cobbler cool slightly before serving.

Notes

  • If using frozen blueberries, do not thaw them before mixing.
  • Serve warm with vanilla ice cream or whipped cream.
