A straightforward recipe for roasting a beef tenderloin.

- 3 lb beef tenderloin roast
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 425 degrees Fahrenheit.
- Pat the beef tenderloin dry with paper towels.
- In a small bowl, mix the olive oil, salt, pepper, garlic powder, and thyme.
- Rub the oil and spice mixture evenly over the entire surface of the roast.
- Place the roast in a roasting pan, fat side up.
- Roast for 15 minutes at 425 degrees Fahrenheit.
- Reduce the oven temperature to 350 degrees Fahrenheit and continue roasting until the internal temperature reaches 130 degrees Fahrenheit for medium-rare (about 30-40 minutes more).
- Remove the roast from the oven and tent loosely with foil.
- Let the roast rest for 15 minutes before slicing.
Notes
- Use a meat thermometer inserted into the thickest part of the roast to check for doneness.
- For medium doneness, cook until the internal temperature reaches 135 to 140 degrees Fahrenheit.
