  • 2 large apples, peeled, cored, and diced
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats
  • 2 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and 6 tablespoons melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool slightly.
  3. In a large bowl, beat the cream cheese, 1 1/2 cups sugar, and vanilla extract until smooth. Beat in the eggs one at a time, mixing well after each addition. Mix in 1/4 cup flour and 1/2 teaspoon cinnamon until just combined. Pour the batter over the cooled crust.
  4. Bake the cheesecake for 40 minutes.
  5. While the cheesecake bakes, prepare the crumble topping. In a medium bowl, combine diced apples, brown sugar, 1/4 cup flour, and rolled oats. Cut in the 2 tablespoons cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  6. After 40 minutes of baking, sprinkle the apple crumble mixture evenly over the top of the cheesecake.
  7. Return the cheesecake to the oven and bake for an additional 15 to 20 minutes, or until the topping is golden brown and the center is mostly set.
  8. Cool the cheesecake completely on a wire rack, then refrigerate for at least 4 hours before serving.
