- 4 cups cubed watermelon
- 2 cups sliced cucumber
- 4 ounces crumbled goat cheese
- 1/4 cup chopped fresh mint
- 2 tablespoons olive oil
- 1 tablespoon lime juice

- 1/4 teaspoon black pepper
Instructions
- Combine the cubed watermelon and sliced cucumber in a large bowl.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to make the dressing.
- Pour the dressing over the watermelon and cucumber mixture. Toss gently to coat.
- Sprinkle the crumbled goat cheese and chopped fresh mint over the salad.
- Serve immediately.
