Description
Simple heart-shaped sandwich cookies filled with vanilla buttercream.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar (for filling)
- 1/4 cup unsalted butter, softened (for filling)
- 1 teaspoon vanilla extract (for filling)
- 1–2 tablespoons milk (for filling)
Instructions
- Beat the softened butter and granulated sugar together until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Wrap the dough and chill for at least 30 minutes.
- Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- Roll out the dough to 1/4 inch thickness. Cut out heart shapes using a cookie cutter.
- Place shapes on prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let cool completely on the baking sheet for 5 minutes before moving to a wire rack to cool fully.
- To make the filling, beat the powdered sugar and softened butter until smooth. Add vanilla extract and milk, one tablespoon at a time, until you reach a spreadable consistency.
- Pair cooled cookies and spread filling on the flat side of one cookie. Top with a second cookie to form a sandwich.
Notes
- For a cleaner cut, chill the cookie cutters briefly before using them on the dough.
- You can use a small heart cutter to cut a small window in the top cookie before baking if you want the filling color to show.
