Ingredients

- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 cup chopped red bell pepper
- 1 cup chopped green bell pepper
- 1/2 cup chopped red onion
- 1/2 cup chopped fresh cilantro
- 1/4 cup olive oil
- 3 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine black beans, pinto beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, salt, and pepper.
- Pour dressing over bean mixture and toss to combine.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve with tortilla chips.
Notes
- For a spicier kick, add a diced jalapeño pepper.
- You can substitute other beans like kidney beans or cannellini beans.
