A savory pie filled with ground turkey and mashed potatoes.
Ingredients

- 1 pound ground turkey
- 1 medium onion, chopped
- 1 cup frozen peas
- 1 cup frozen carrots
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon all-purpose flour
- 1 cup chicken broth
- 2 cups mashed potatoes
- 1 egg, beaten (for egg wash)
- 1 sheet puff pastry, thawed
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Brown the ground turkey and chopped onion in a skillet over medium heat. Drain any excess fat.
- Stir in the peas, carrots, thyme, salt, and pepper. Cook for 5 minutes.
- Sprinkle the flour over the meat mixture and stir well.
- Pour in the chicken broth and bring to a simmer. Cook until the sauce thickens slightly, about 5 minutes. Remove from heat.
- Spread the mashed potatoes evenly over the meat mixture in the skillet.
- Place the sheet of puff pastry over the filling. Crimp the edges to seal. Cut a few slits in the top for steam release.
- Brush the top of the pastry with the beaten egg.
- Bake for 25 to 30 minutes, or until the pastry is golden brown and puffed.
- Let the pie rest for 10 minutes before slicing and serving.
Notes
- You can substitute sweet potatoes for regular potatoes in the mash for a different flavor.
- Use leftover cooked turkey instead of ground turkey if you prefer.
