Simple Tomato Pasta

Description

A quick and easy pasta dish featuring a fresh tomato sauce.


Ingredients

  • 1 pound spaghetti or linguine
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let it brown.
  4. Pour in the crushed tomatoes. Stir in the oregano, salt, and pepper.
  5. Bring the sauce to a simmer and cook for 10 minutes, stirring occasionally.
  6. Add the drained pasta to the skillet with the sauce. Toss to coat.
  7. If the sauce seems too thick, add a little reserved pasta water until the desired consistency is reached.
  8. Stir in the fresh basil.
  9. Serve immediately, topped with Parmesan cheese if desired.

Notes

  • For a richer flavor, use whole peeled tomatoes and crush them by hand before adding them to the skillet.
  • You can add a pinch of red pepper flakes with the garlic for a little heat.
