Ingredients

- 1 ripe avocado, diced

Instructions
- Place the chopped tomatoes, cucumber, diced avocado, and sliced red onion in a large bowl.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to make the dressing.
- Pour the dressing over the vegetables and avocado.
- Gently toss all ingredients until lightly coated.
- Stir in the chopped cilantro just before serving.
Notes
- For best flavor, let the salad sit for 5 minutes after dressing before serving.
- You can substitute lemon juice for lime juice if needed.
