Description

A simple, moist chocolate cake baked in a sheet pan, topped with a warm, fudgy chocolate glaze.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed hot coffee
  • 1 cup (2 sticks) unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 15×10 inch jelly roll pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking soda, and salt.
  3. Add the buttermilk, oil, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Carefully pour the hot coffee into the batter and mix until smooth. The batter will be thin.
  5. Pour the batter into the prepared pan. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  6. While the cake bakes, prepare the glaze. In a saucepan over medium heat, melt the butter.
  7. Remove the butter from the heat. Whisk in the cocoa powder.
  8. Stir in the powdered sugar, milk, and vanilla extract until the glaze is smooth. If using pecans, stir them in now.
  9. As soon as the cake comes out of the oven, pour the warm glaze evenly over the hot cake.
  10. Allow the cake to cool completely before slicing and serving.

Notes

  • For a richer chocolate flavor, use strong, freshly brewed coffee.
  • You can frost the cake while it is still warm, which allows the glaze to soak in slightly.
  • If you skip the pecans, the cake is naturally gluten-free, but check your flour source.
