- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 cup sliced fresh peaches
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp cornstarch
- Salt and pepper to taste
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken thighs for 3-4 minutes per side until browned. Remove chicken from skillet and set aside.
- Add sliced peaches and chopped red onion to the skillet. Cook for 5 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- In a small bowl, whisk together chicken broth, soy sauce, honey, and cornstarch.
- Pour the sauce mixture into the skillet. Bring to a simmer, stirring until thickened.
- Return the chicken thighs to the skillet. Spoon the sauce over the chicken.
- Cover and simmer for 10-15 minutes, or until chicken is cooked through.
- Serve hot.
Notes
- Use ripe peaches for the best flavor.
- Adjust honey and soy sauce to your preference.
- Garnish with fresh basil or parsley if desired.
