- 2 medium sweet potatoes
- 1 cup cooked white rice
- 1/2 cup teriyaki sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 cup chopped green onions for garnish
- 1 tablespoon sesame seeds for garnish
Instructions
- Peel and grate the sweet potatoes into fine strands resembling rice.
- In a large skillet over medium heat, cook the sweet potato strands for 5 to 7 minutes, stirring occasionally, until tender.
- In a small bowl, whisk together the teriyaki sauce, soy sauce, and sesame oil.
- Pour the sauce mixture over the cooked sweet potatoes and stir to coat evenly. Cook for 1 minute until the sauce thickens slightly.
- Divide the cooked white rice between two bowls.
- Top the rice with the sweet potato mixture.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- You can substitute brown rice for white rice.
- For added protein, add cooked chicken or tofu to the bowls.
