Description

A straightforward recipe for preparing a pork loin stuffed with herbs and breadcrumbs.


Ingredients

  • 1 (3 pound) boneless pork loin roast
  • 1 tablespoon olive oil
  • 1 cup breadcrumbs
  • 1/2 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Butterfly the pork loin by slicing it horizontally almost all the way through, leaving one side attached so it opens like a book.
  3. In a bowl, mix the breadcrumbs, parsley, Parmesan cheese, and minced garlic. Stir in the chicken broth until the mixture is moist but not soggy.
  4. Season the inside of the pork loin with salt and pepper. Spread the stuffing mixture evenly over the inside surface.
  5. Roll the pork loin tightly and secure it with kitchen twine at 1-inch intervals. Rub the outside of the roast with olive oil and season with salt and pepper.
  6. Place the roast in a roasting pan. Bake for 60 to 75 minutes, or until an internal temperature of 145 degrees F (63 degrees C) is reached.
  7. Remove the roast from the oven and let it rest for 10 minutes before slicing and serving.

Notes

  • You can substitute spinach or mushrooms for some of the parsley in the stuffing.
  • Use a meat thermometer to check for doneness accurately.
