Description

A simple recipe for a moist and spicy gingerbread loaf similar to the Starbucks version.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 1/2 cup boiling water
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the molasses.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  10. For the glaze, whisk together the powdered sugar and milk until smooth. Drizzle over the cooled loaf.

Notes

  • For a stronger ginger flavor, add 1/2 teaspoon of ground white pepper to the dry ingredients.
  • You can substitute buttermilk for the boiling water for a slightly tangier loaf, reducing the baking time by about 5 minutes.
