Description
A simple recipe for a moist and spicy gingerbread loaf similar to the Starbucks version.
Ingredients

- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1/2 cup molasses
- 1/2 cup boiling water
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the molasses.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar and milk until smooth. Drizzle over the cooled loaf.
Notes
- For a stronger ginger flavor, add 1/2 teaspoon of ground white pepper to the dry ingredients.
- You can substitute buttermilk for the boiling water for a slightly tangier loaf, reducing the baking time by about 5 minutes.
