Description

A recipe for making blueberry scones similar to those sold at Starbucks.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup fresh or frozen blueberries
  • 1/2 cup heavy cream, plus more for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gently stir in the blueberries.
  5. In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients. Mix gently with a fork until just combined. Do not overmix.
  7. Turn the dough out onto a lightly floured surface. Gently pat or roll the dough into a 3/4-inch thick circle or square.
  8. Cut the dough into 8 wedges or squares. Place them on the prepared baking sheet.
  9. Brush the tops lightly with extra heavy cream and sprinkle with coarse sugar, if using.
  10. Bake for 15 to 18 minutes, or until the tops are lightly golden brown.
  11. Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • If using frozen blueberries, do not thaw them before adding them to the dough.
  • For a richer flavor, you can substitute half of the heavy cream with buttermilk.
  • You can make these ahead and freeze the unbaked wedges; bake directly from frozen, adding a few extra minutes to the baking time.
