Description
A layered pasta dish using ravioli instead of traditional lasagna noodles, featuring a blend of four cheeses and spinach.

- 1 (15 ounce) package frozen spinach, thawed and squeezed dry
- 1 (24 ounce) jar marinara sauce
- 1 (15 ounce) container ricotta cheese
- 1 large egg, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (25 ounce) package refrigerated cheese ravioli
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese, for topping
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- In a medium bowl, combine the drained spinach, ricotta cheese, beaten egg, 1/4 cup Parmesan cheese, salt, and pepper. Mix well.
- Spread about 1 cup of marinara sauce evenly over the bottom of the prepared baking dish.
- Arrange half of the ravioli in a single layer over the sauce.
- Spread half of the ricotta-spinach mixture over the ravioli layer.
- Sprinkle 1 cup of the mozzarella cheese over the ricotta mixture.
- Spoon about 1 cup of marinara sauce over the mozzarella.
- Repeat the layers: remaining ravioli, remaining ricotta mixture, remaining 1 cup of mozzarella cheese.
- Top with the remaining marinara sauce.
- Sprinkle the remaining 1/2 cup of Parmesan cheese over the top layer of sauce.
- Bake for 30 to 35 minutes, or until the cheese is melted and bubbly and the sauce is hot.
- Let the lasagna rest for 10 minutes before cutting and serving.
Notes
- You can substitute fresh spinach by blanching and squeezing dry about 10 ounces of fresh leaves.
- For a richer flavor, use a high-quality marinara sauce.
- If you prefer a thicker top crust, add a thin layer of breadcrumbs mixed with a little melted butter before the final Parmesan topping.
