A quick and easy recipe for cooking shrimp with orzo pasta.
Ingredients

- 1 tablespoon olive oil
- 1 pound raw shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup frozen peas
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
- Add garlic to the skillet and cook for 30 seconds until fragrant.
- Add orzo and toast for 1 minute, stirring constantly.
- Pour in chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, or until orzo is tender and liquid is absorbed.
- Stir in frozen peas and cook until heated through, about 2 minutes.
- Return the cooked shrimp to the skillet. Stir in Parmesan cheese.
- Season with salt and pepper. Serve immediately.
Notes
- You can substitute vegetable broth for chicken broth.
- For extra flavor, add a squeeze of fresh lemon juice before serving.
