Description

A straightforward recipe for classic shepherd’s pie with a ground meat base and a mashed potato topping.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground lamb or beef
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1/2 cup frozen peas
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 3 pounds potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 4 tablespoons butter

Instructions

  1. Boil potatoes until tender. Drain well.
  2. Mash potatoes with milk and butter. Season with salt and pepper. Set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add ground meat and cook, breaking it up, until browned. Drain excess fat.
  5. Add onion, carrots, and celery to the skillet. Cook until softened, about 5 minutes.
  6. Stir in flour and cook for 1 minute.
  7. Pour in beef broth and add thyme. Bring to a simmer and cook until the sauce thickens slightly.
  8. Stir in frozen peas. Season the meat mixture with salt and pepper.
  9. Transfer the meat mixture to a 9×13 inch baking dish.
  10. Spoon the mashed potatoes evenly over the meat mixture. Create texture on top with a fork.
  11. Bake at 400 degrees Fahrenheit for 25 minutes, or until the topping is lightly browned and the filling is bubbling.

Notes

  • For a richer flavor, use lamb for traditional shepherd’s pie.
  • You can grate a small amount of cheese over the potato topping before baking for extra color.
