Description
A quick and easy one-pan meal featuring sausage and vegetables.
Ingredients

- 1 lb smoked sausage, sliced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 bell peppers (any color), sliced
- 1 cup sliced mushrooms
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sausage slices and cook until browned, about 5 minutes. Remove sausage and set aside.
- Add onion and bell peppers to the same skillet. Cook until softened, about 5 minutes.
- Add mushrooms, Italian seasoning, salt, and pepper. Cook for 3 more minutes.
- Return the sausage to the skillet. Pour in chicken broth.
- Stir everything together and cook until the broth has mostly evaporated, about 2 minutes.
- Serve immediately.
Notes
- You can substitute smoked sausage with kielbasa or andouille sausage.
- Add a pinch of red pepper flakes for some heat.
