A straightforward recipe for a hearty soup featuring sausage and kale.
Ingredients

- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1 bunch kale, stems removed and chopped
- 1/2 cup small pasta (like ditalini or small shells)
- Salt to taste
Instructions
- Brown the sausage in a large pot over medium heat. Drain off excess grease.
- Add the onion, carrots, and celery to the pot. Cook until softened, about 5 to 7 minutes.
- Pour in the chicken broth and diced tomatoes. Add oregano, thyme, and pepper. Bring the mixture to a boil.
- Reduce heat and simmer for 10 minutes.
- Stir in the pasta and cook according to package directions, usually about 8 minutes, or until tender.
- Add the chopped kale during the last 5 minutes of cooking.
- Taste and add salt if needed before serving.
Notes
- You can substitute ground turkey or chicken sausage for Italian sausage.
- Rinse the kale well before chopping.
- If you prefer a thicker soup, add 1/2 cup of cannellini beans with the broth.
