Ingredients

- 1 cup fresh lemon juice
- 1/2 cup granulated sugar
- 1/2 medium cucumber, peeled and seeded
- 1/4 cup fresh mint leaves
- 4 cups cold water
- Ice cubes
- Cucumber slices and mint sprigs for garnish
Instructions
- In a blender, combine the peeled and seeded cucumber and fresh mint leaves. Blend until smooth.
- Strain the cucumber-mint mixture through a fine-mesh sieve into a pitcher, pressing to extract as much liquid as possible. Discard the solids.
- Add the fresh lemon juice and granulated sugar to the pitcher. Stir until the sugar is dissolved.
- Pour in the cold water and stir well.
- Chill the lemonade in the refrigerator for at least 30 minutes.
- Serve over ice, garnished with cucumber slices and mint sprigs.
Notes
- Adjust sugar to your sweetness preference.
- For a stronger mint flavor, muddle the mint leaves before adding them to the blender.
- You can add a splash of sparkling water for a fizzy version.
