Ingredients

  • 1 cup fresh lemon juice
  • 1/2 cup granulated sugar
  • 1/2 medium cucumber, peeled and seeded
  • 1/4 cup fresh mint leaves
  • 4 cups cold water
  • Ice cubes
  • Cucumber slices and mint sprigs for garnish

Instructions

  1. In a blender, combine the peeled and seeded cucumber and fresh mint leaves. Blend until smooth.
  2. Strain the cucumber-mint mixture through a fine-mesh sieve into a pitcher, pressing to extract as much liquid as possible. Discard the solids.
  3. Add the fresh lemon juice and granulated sugar to the pitcher. Stir until the sugar is dissolved.
  4. Pour in the cold water and stir well.
  5. Chill the lemonade in the refrigerator for at least 30 minutes.
  6. Serve over ice, garnished with cucumber slices and mint sprigs.
