- 2 packages (8 ounces each) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1 cup heavy cream, whipped
Instructions
- Mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press mixture into the bottom of a 9-inch pie plate. Chill for 10 minutes.
- Beat softened cream cheese until smooth. Gradually beat in powdered sugar, vanilla extract, and lemon juice until combined.
- Fold in whipped heavy cream gently.
- Spread the cream cheese mixture over the chilled crust.
- Chill for at least 4 hours, or until firm, before serving.
Notes
- You can top the finished cheesecake with fresh berries or a fruit topping.
